This healthier version of a spaghetti bolognese is one of my favorite meals! Because the spaghetti is made from zucchini, which is called courgette in Dutch, I named this dish Courgetti Bolognese. Noodles made from zucchini are one of the best ways to keep your meal low in carbs. In stead of using regular spaghetti made from wheat you use a zucchini that contains a lot less calories. & You still get the same taste in your mouth because it has the same texture!! 🙂
I make this zucchini noodles with a julienne peeler. Almost everyone already has this item in their kitchen. So you don’t need some fancy and expensive tools for this recipe :). With the julienne peeler you can slice the thinnest, most delicate noodles.
The zucchini noodles are not only much healthier but also a lot faster to cook than regular spaghetti! You just have to slice the spaghetti strings and then put it in the microwave. Just pile all your zucchini noodles in a microwave-safe dish and cook for one minute. Depending on the amount of noodles you have you may need to cook longer, though I would recommend 30-second increments to prevent over-cooking. Then, divide your noodles between serving plates and top with the sauce.
Recipe Courgetti Bolognese
Ingredients for 2 big plates
- 2 zucchini
- 2 carrots
- 10 mushrooms
- 1 bell pepper
- 800 g tomato sauce with basil (from a jar)
- Meatless meatball
- Nutritional yeast (as much as you want)
Start by making the tomato sauce. I used tomato sauce from a jar because I was very hungry and wanted my dish to be ready very fast :p. Cut your veggies in small pieces. Put the veggies and the sauce in a pot on medium heat. Let the sauce cook until the veggies are tender. Put a pan on the fire. Add in some oil. When the oil is hot put in your meatless meatballs. When they are ready and slightly brown get them out of the pan.
Cut your zucchini in spaghetti strings with a julienne peeler. Put the zucchini noodles in a microwave-safe dish in the microwave for 1minute. If you have a lot of noodles put them in the microwave a little bit longer.
Put zucchini noodles on a plate. Poor the tomato sauce over the noodles. Don’t forget your delicious meatless meatballs. If you like a cheesy flavor sprinkle some nutritional yeast flakes over your courgetti bolognese. ENJOY!
