The days are getting longer and the sun has finally started to shine here in Belgium! 😀 This makes me sooo happy. When it’s warm outside I like to eat cooler foods like salads, fresh fruit and smoothies. Nothing better than a refreshing smoothie on a hot summer day! Who agrees??
So I took my blender and started to experiment with some smoothie flavor combinations. And this smoothie was an absolute winner for me. It’s deliciously sweet thanks to the berries. But it has also a lot of healthy protein and fats thanks to the oats, soy yogurt and linseed oil. Therefore it is the perfect breakfast! You can also drink this smoothie as an afternoon snack, but then you’ll be full for a at least 3hours 🙂
Recipe: Raspberry Smoothie
- 2 handfull of blueberries
- 3 handfull of raspberries
- 2 TBSP oatmeal
- 1 TBSP linseed oil
- 200 ml soy yoghurt
- 100 ml almond milk
Putt all the ingredients in the blender. Mix until you have a smooth mixture. Serve in a long drink. You can decorate the smoothie as you like. I used coconut flakes and sugar hearts. Add some extra ice cubes if you desire. ENJOY!
P.S.: You can also use frozen berries for this mixture. You can defrost the berries in the fridge overnight. Or you can use the frozen berries, then you’ll get a raspberry ice cream 🙂
