When you are looking for a high protein AND vegan breakfast. I’ve got something for you: chia seed breakfast pudding. I love this breakfast because it’s ready in 30seconds! You can eat it straight away or eat in on your way to work/school. Everyday I have to take the bus to work. Then I love to eat my breakfast in the bus so I can enjoy every bite :-)!
Chia seeds are also one of the so called super foods! A superfood is a nutrient-rich food considered to be especially beneficial for health and well-being. Chia seeds are loaded with benefits for your brain and body. They are loaded with fiber, protein, Omega-3 fatty acids and various micronutrients. If you’re struggling with getting in enough protein you should integrate chia seeds in your diet!
Recipe: Chia Seed Breakfast Pudding
- 4 TBSP chia seeds
- 300ml oat milk
- 6 TBSP natural soy yogurt
- Handfull of frozen berries
- Homemade granola as a topping
Make the chia pudding the night before you want to eat this breakfast parfait. Mix the chia seeds and the oat milk in a jar. Close of the jar and put in the fridge for at least 4 hours. The next day grab your chiapudding. The chia seeds should have soaked up a lot of the liquid. You should have created a thick pudding now.
Divide the pudding in two glasses. Next add 3 tablespoons of soy yogurt in each glass. Then add the toppings. Put frozen berries and granola on top of your chia seed breakfast pudding. Grab a spoon and: ENJOY!
