Vegan Chocolate chip cookies. Okay. I don’t know how I have to say this. But these cookies are literally the best damn thing I have ever made in my life!! I should have taken a picture of my face after taking my first bite from this cookie 😛 Then you would completely understand how special these cookies are!
So I’ve baked a lot of cookies in my life. But this is the first time that the cookies taste this good!! I even suggested to my boyfriend that we should start a cookie business together.. So maybe in the future :p Hehe..
No but seriously. If you have 15 minutes of free time, just try this recipe. I promise that you’ll not regret it! These chocolate chip cookies are the perfect mix between sweet and salty 🙂 There not chewy but super crunchy! And that’s all a cookie has to be for me. The ingredients are all plant based of course. So there is no butter, eggs, sugar,… All natural and healthy ingredients! Which makes these cookies a lot healthier than regular chocolate chip cookies.
Recipe Chocolate Chip Cookies
- 144gr (1 & 1/2 cup) almond flour
- 3 TBSP oat meal
- 1 TSP baking powder
- pinch of salt
- 2 TBSP olive oil
- 6 TBSP ahorn syrup
- 3 TBSP peanut butter
- 1 TSP vanilla extract
- chocolate chips (as much as you want :p)
Preheat the oven to 180° Celsius. Start with adding all the dry ingredients (almond meal, oat meal, baking powder and salt) in a bowl. Mix everything together. Make sure you remove most of the lumbs. In another bowl, add olive oil, ahorn syrup, peanut butter and vanilla extract. Next mix the dry and the wet ingredients together. Mix it very slowly until you get a smooth mixture. Then add the chocolate chips! You can add as much as you want 😀
Make cookies from the dough. Use around 1 big TBSP of dough for 1 cookie. Place your cookies on a baking sheet. Bake the cookies for 11-13 minutes until they are golden brown. ENJOY!
