This afternoon I was feeling like eating a Refreshing Pineapple Salad. Sometimes I really love to eat a raw plant based dinner or lunch. It’s just so refreshing and very low in calories! This salad is one of my faves because it’s so easy (yes I’m lazy :-p). The pineapple gives it that little extra sweetness.
Eating a salad is a super convenient way to get in those greens!
Eating salad has a lot of benefits. Salad contains a lot of fiber. This helps you to digest your food (bye bye constipation ;-)). The fiber also gives you a full feeling. This prevents you from eating a whole lot of unhealthy food after your lunch or dinner. So in the end you’ll probably lose some weight.
One of the biggest benefits of eating salad and leafy greens is that it prevents you from getting a lot of nasty diseases. The vitamins and minerals in salad reduces the risk of diabetes. Salad reduces the risk of getting cancer. And last but not least salad helps protecting your heart.
And last but not least. Eating a crunchy, sweet and refreshing salad is just super yummy 🙂 !
Refreshing Pineapple Salad
Ingredients
- 70g iceberg lettuce
- 50g dandelion salad
- 120g pineapple
- 1/3 cucumber
- 1 TBSP hemp seeds
- 1 TBSP sunflower seeds
- 2 TBSP olive oil
How To
Add iceberg lettuce and dandelion salad on a plate. Cover the salad with olive oil. Cut 1/3 of a cucumber in tiny parts. Cut 120g of pineapple in small chunks. Add the cucumber and the pineapple on top of the salad. Sprinkle the salad with hemp seeds and sunflower seeds. Take a bite of your refreshing pineapple salad. ENJOY!
