Vegan Valentine’s Truffles

Ahh… Valentine’s day. The day when all the lovebirds out there express their never ending love for each other. My boyfriend and I don’t really celebrate V-day though. For us there’s love in the air like.. every day 😀 But I got to admit that getting a little surprise is always fun. Even if it’s not really a surprise when you get a teddy bear, some flowers or a box of chocolates on Valentine’s day :-p

For people who do celebrate V-day I know that finding a winning gift is not always easy… That’s why I created an amazing Valentine’s day recipe! I’ve made two kinds of chocolate Valentine’s truffles. The first truffle has a creamy chocolate ganache filling. The second truffle is filled with a refreshing raspberry mixture. Both Valentine’s truffles are covered in a layer of dark chocolate and topped with all sorts of sprinkles.

I’m 100% sure that your lover will be very happy when you give him/her your homemade chocolate truffles. There’s this dutch saying ‘de liefde gaat door de maag’. This means that love and food have a very strong connection. So if you give your loved one some homemade food, he/she will love you even more. I know for sure that I would love someone who gives me chocolate :-p.

When you give something that you made yourself the gift suddenly becomes a lot more personal. You’ve put in your time to make it extra special. That’s why a box of chocolates from the store can never replace some homemade Valentine’s truffles. The best part is that the recipe is very easy and has less than 7 ingredients! The time you would spend driving to the store buying some chocolates, you can now easily spend in making some chocolates yourself !

Chocolate Truffles

Putt the coconut milk and the soy creamer in a small sauce pan. Heat the liquid until it almost reaches its boiling point. Put the vegan chocolate chips in a large bowl. Pour the hot mixture of coconut milk and creamer over the chocolate chips. Stir together until all the ingredients are mixed. Do not over stir. Put the mixture in the fridge for a night.

The next morning you can immediately start with rolling little balls of the mixture. Place the balls on parchment paper. Now putt them in the freezer for 4 hours. Melt 350g dark chocolate. Dip all the chocolate balls in the chocolate sauce. Putt the decorations on the chocolate truffles when they are still hot. That way the decorations will stick on the truffles. Put back in the freezer until the chocolate is hard.

Store chocolate truffles in the fridge. And most importantly ENJOY!

Raspberry Truffles

Soak the cashews for 2 hours in hot water. Put the cashews in a towel to remove the water. Putt the cashews, frozen raspberries, oats and agave syrup in a blender. Blend until you get a smooth pink dough. Roll little balls from the dough with your hands (TIP: the dough is less sticky when your hands are wet :-)). Put the little balls on parchment paper. Put them in the freezer for 20 minutes.

When your raspberry balls are not sticky anymore you can get them out of the freezer. Now it’s time to melt your dark chocolate.  Dip the pink balls in the chocolate until they are fully covered. Put on parchment paper and immediately add your decorations. The decorations will not fall of your truffle when the chocolate is still hot. Putt back in the freezer for 30 minutes.

When you take the truffles out of the freezer the chocolate should be totally dry. And then… take a bit of your delicious raspberry truffle. ENJOY!
