Today I am so happy because I can share my first blogpost with you! Since I became a vegan you could find me in the kitchen like all day long. I experimented with all kinds of plant based foods. During this process I created a few great recipes. On this blog I’ll share all of these amazing recipes with you!
I’ll start of with a super delicious and very easy recipe: strawberry nicecream.
Before I came to the vegan side I had never even heard of nicecream. It’s ice cream made of frozen fruit. The main ingredient is frozen bananas. When the bananas are a little bit overripe they are the best to make the ice cream. So if you have spotty bananas in your fruit basket and don’t know what to do with them, put them in the freezer! You will thank me later :-p
What makes the nicecream so amazing is that you can adjust it to your own favorite flavors. You start of with the frozen bananas and then you can mix all sorts of fruit with it. If that’s not enough you can add toppings. So if you love chocolate: add lots of chocolate sauce. If you are a strawberry lover: add some strawberry coulis and fresh strawberries. The options are endless!
RECIPE STRAWBERRY NICECREAM
- 2 frozen bananas
- 6 frozen or fresh strawberries
- dash of almond milk (to blend easier)
- Handfull of frozen or fresh berries
- pomegranate seeds
Blend the frozen bananas, strawberries and the plantbased milk with a hand mixer. Blend until you have a ice cream like consistency. You can also use a strong blender.
Put a handful of frozen berries in a bowl. Put in the microwave for 2-3 minutes. Stir the berries until you get a berry coulis. Pour the berry coulis over the ice cream. Add popcorn and pomegranate seeds. ENJOY!
